So I found this recipe on the internet, it's for applesauce cookies. It calls for flour, salt, applesauce, butter, confectioners's sugar, cinnamon and vanilla. I substituted the confectioner's sugar for normal sugar flour for "just add water" pancake mix and then just skipped the vanilla since I didn't have any. And then, just for fun, I cut up some fresh cherries and added them to the sweet cinnamon-applesauce cookie dough. :3
The recipe says to roll the dough into balls, bake them and the roll them in a cinnamon sugar mix...well the dough was too soft for rolling into anything, so I just dropped spoonfuls on a cookie sheet, they expanded into big soft cookies. Sort of a cross between a cookie and a biscuit, so i didn't roll them in the cinnamon/sugar.
Then I just got this inspiration. A day ago, I got myself a chocolate bar, it's dark chocolate, with orange pieces and almond bits. So I broke up some of the chocolate and sprinkled it into the dough and then added some baking oatmeal. These turned out also like a cross between an oatmeal cookie and biscuit, but the orange almost chocolate totally compliments the cherries and the apples with cinnamon. They are so good! Big, and soft, and would have turned out better as like....bread bars or something but they are awesome.....probably could use more cherries. xD
(p.s. cherries are my favorite fruit ever)
